I did some additional testing of Custom dates in JEM 5.0.1 Beta 2.
Creating a completely new event with Custom dates works correctly.

However, I could reproduce one specific issue: if an already existing standalone event is edited afterwards and changed to Custom dates, the additional occurrences are not created. The same happens with an event created through Save as Copy.

A small fix in the Event model resolves this. After applying it, all 5 Custom dates regression tests pass.

I have reported this separately on GitHub as a follow-up to #2288. see:  github.com/jemproject/JEM-Project/issues/2306

So your original report did point to a real edge case in the current Beta 2 implementation.

We found that the problem specifically affected an existing standalone event that was later changed to use Custom dates. The same problem occurred with an event created using Save as Copy.

Creating a new event with Custom dates from the beginning already worked correctly.
We have now prepared a fix so that an existing standalone event can become the first occurrence of a new Custom dates series. The additional dates will then be created as separate linked events, as expected.

The fix will be uploaded shortly and is also tracked in GitHub issue #2306.

The fix was included in JEM 5.0.1 RC1.
