There's no dropdown to choose a template parameter. I don't know if it's using Reponsive or alternate or default. My override doesn't seem to be working though and there's no way to choose that either.

For sure, if you had overrides for earlier JEMs, you should adapt them too!

I see that there are two options. Responsive and Alternative. But there is no option to choose a template within JEM Basic.

There are templates but no way to use them.

if you choose in JEM component settings default responsive, you'll have this template in the modules too.
if you choose in JEM component settings legacy table style. you'll have this in the modules too.

Is there a way to use templates in the standard Joomla way? usually it is found in the tmpl folder
