hello,
if I open an attendant in the backend and try to add a comment, it doesn't get saved. can this be fixed?

I understand the comment field as the comment from an attendant, not about the attendant.

Yes but when the attendants are supposed to add a comment and simply didn't do it and the organizer wants to have it in the export, they want to add it manually...

I think that your issue has been fixed, see in github the case:
github.com/jemproject/JEM-Project/issues/2272

The fix is included in the next release, JEM 5.0.1, which is scheduled to be published today.
